Chicken & Sausage Gumbo

Roux:

 
2 C oil 2 C flour

Chop:

 
3 C onions 2 C bell peppers
2 C celery 2 C green onions
1 C parsley 8 cloves garlic

Remaining Ingredients

 
2 lbs sausage 2 chickens - boiled, de-boned, and diced -- reserve broth
3 or 4 lbs okra - to taste 2 - 16oz cans stewed tomatoes
3 TBS salt 3 Bay leaves
2 TBS Tony Chachere (optional) 1 TBS black pepper
12 C chicken stock (and water if necessary)  

To Prepare:

Serve over rice with sprinkle of file' gumbo.
