Veggie Chopped Salad

3 C finely chopped fresh broccoli 1/4 C sugar
3 C finely chopped cauliflower 2 TBSP grated parmesan cheese
3 C finely chopped celery 1 TBSP cider vinegar
2 C frozen peas (about 8 oz) thawed 1/4 TSP salt
6 bacon strips, cooked and crumbled 1/4 C salted peanuts
  1 1/3 C mayonnaise

To Prepare:

In a large bowl, combined first five ingredients.

In a small bowl, mix mayonnaise, sugar, cheese, vinegar and salt until blended. Add to salad and toss to coat.

Just before serving, add in peanuts.

Refrigerate leftovers.

Yield: 12 servings.
