Cornbread Salad


Make one 9” pan of cornbread, cooked, cooled and crumbled:

Cornbread:

¼ cup vegetable oil 1 cup yellow corn meal
1 cup all-purpose flour 1 Tablespoon Baking Powder
½ teaspoon salt  

Bake at 425 degrees 20-25 minutes Ten slices cooked, and crumbled bacon.

Combine:

3 large tomatoes 2-16 oz cans drained Pinto, ranch or red beans
½ cup chopped green peppers 1-16 oz can whole kernel corn
½ cup green onions  

Combine:

1 cup sour cream 1 can diced green chilies
1 cup mayonnaise 8 oz. shredded cheddar cheese
1 pkg. dry ranch dressing mix  

Layer in a trife bowl … Cornbread; Beans; Corn; Veg. Mix; Bacon; Cheese; Dressing mix.
