Southern Sweet Potato Pie

|3 T all-purpose flour||Pinch of salt|
|1 2/3 sugar or splenda||1/4 C butter or margarine|
|1 C mashed, cooked sweet potatoes||3/4 C evaporated milk|
|2 eggs||1 9-inch pastry shell|
|1/4 tsp fresh ground nutmeg|
- In a large mixing bowl, combine the flour and sugar.
- Add potatoes, eggs, nutmeg, salt, butter and evaporated milk; beat well.
- Pour into pastry shell.
- Bake at 350 degrees for 55-60 minutes.
Yield: 8 servings
